2018 F-150 Lariat Transmission Overheating

I'm here to ask if you could help me because some mechanics haven't been able to find the issue.
Last year, I bought a 2018 F-150 Lariat with a little over 50K miles. I checked as much as possible with my limited knowledge in mechanics, and it looked good. The issue is that, due to work, I live away from home for three weeks a month, so I bought the truck and could use it properly three weeks after getting it. To the point, after driving the truck for over 3 hours to a different state, the check engine light came on. I went to an AutoZone, and after the scan, it came up that one of the catalytic converter banks was bad.
The next day, I was heading home from the trip, and about 2h30m into the trip, the dashboard was showing me that the transmission temperature was high. I called a tow truck and waited to be taken home. It took them over an hour and a half to give any signs, so I waited for the truck to cool down and drove home. It was probably not the most recommended thing, but it was getting dark, and I was in a pretty risky zone with my family, so it was an easy decision to make. I took it to a mechanic and he got rid of the light, did some work, and told me it was fixed, that if something else happened, to let him know. On the way home, I was testing the truck, and the temperature was rising again. I called him and took the truck back the next day.
He recommended replacing the transmission oil and filter, which looked bad. I accepted the oil change, which wasn't cheap. When I left, it was the same thing; I tested the truck, and the temperature rose again as I had to fly out. I just called the mechanic, who told me to get the temperature sensor, which I personally bought from the Ford website.
For more context, I live in Northern Mexico and work in the US, which is why I'm often away from my house and don't drive the truck as frequently.
The sensor was replaced, and it appeared to be it. It's not over yet. When I use the truck for a couple of hours, pressing the gas makes it feel odd; it starts responding less smoothly. For lack of a better term, it feels like a minor rattling or not responding as quickly, and then the temperature starts rising again. When the temperature rises and then falls again, allowing the truck to travel from point A to point B, it doesn't exceed 50 MPH, as if it were governed. As if the gas wouldn't react.
Dealerships in Mexico are not the same as in the US, so taking the truck to the dealership would entail a lot of money for no real solution. Has anyone faced something similar? Any advice is appreciated.
