When it shuts down, you can put it in park and it'll stay off, and you can even put it back in drive and it'll still stay off until you start releasing the brake pedal. What turned it back on was when you either unbuckled your belt, or opened your door. Both of those will disable the start-stop and restart the engine, and this is to prevent people from forgetting their truck is still "running" and getting out. If it was still in drive and you got out, it would start crawling away from you

I have a 3.5 EB and in the driver's cluster settings, there's a place to disable the auto start/stop. It's inoperable on the 3.5. I've read it's in there as a "future" option. Isn't it on the 2.7 cluster settings? It would turn it off semi-permanently until you go back into settings and re-enable it and you wouldn't have to turn it off every time you start. Just a thought.

No, I have no such button but there's a place in "my" cluster screen settings to turn "on" or "off" a non-existent Auto Start/Stop mode. I've turned it on in hopes it was a hidden feature and it does nothing. I would presume that 2.7 EBs have the same such setting to enable or disable. My truck is a 2015 3.5 EB.

I'd be interested in seeing a picture of that on your display. Also if any higher level 2.7 owners out there could check and see if they have that as well? Would be interesting to know as well.
