Finally got my level, wheels, and tires done! 35's ended up being nearly the exact same price as 33's, so I went big. I like more tire, less rim. I bought 17x9 XD Addicts +18 offset with BFGoodrich KO2's 35x12.5x17. The level is a 2" Pro Comp. I am extremely happy with how it turned out. The wheels stick out about 1/2" to an inch, perfect for me.

Im normally indifferent when it comes to bigger tires and lifts on trucks, I think they look great on Jeep Wranglers but my first truck was lifted with bigger tires and it sucked using the bed and getting in and out of.
Maybe its like you said, more tire less rim and I think filling the wheel wells helps but either way I do like it.

Front - 37.75" / 40.75"
Rear - 40" / 41.25"
So I gained about 3" in the front and 1" in the rear. Enough to notice, but not really too big of a difference getting in and out in my opinion. The bed is still very much accessible.
