I have a 87 302 with ac that I just had the cats taken off and I now have the smog pump taken off and I wanna know what size belt do I need to use or what is the best way to measure it? And what's the best way to plug the back of the heads

If you have factory AC, get the belt for trucks without factory AC. For the holes, use 1/4" NPT plugs and high temp loctite.
