Clutch Adjustment...Possible?

Just finished complete engine rebuild on 87 ford f150, straight 6 (4.9L). Also installed new clutch, clutch throwout brgs, and flywheel turned (ground). Came out beautiful. Only thing is, the clutch pedal goes to end of stroke to disengage clutch. After though reading and looking for a pedal adjustment (there is none). Chiltons spec's should be half inch movement at slave cylinder. There is 5/8".

I called best mechanic in town. He said after taking material off of flywheel. You need to shim behind flywheel, to bring it out, toward the throwout brg. lever. Clutch pivot lever has been figured out at factory. My truck probably has had plate done before. Wish I new this before putting and completing bolt up. So I'm thinking to put a shim of 1/16 to make the clutch pedal correct.

Fly wheels don't cost that much, look to Rock Auto. Looks like around $50 for my truck, a bit more, if you want to go to the 11" clutch, which wouldn't be a bad idea if you are going to haul firewood.
