Suggest to get the codes read to see if the computer has flagged anything.

Sounds like the fuel pump or fuel pressure related. I just had the same problem. Good base fuel pressure, but higher revs equaled bucking etc.

How much pressure (exactly, measured in psi with a gauge) do you consider good ?

Idle, a steady 40-45psi although mine's a 6 cyl, not a v8. You should be able to find fuel pressure requirements somewhere. Fuel pressure should go up steadily with increased throttle. Smooth and quick, not jerky, and stay at that level when the throttle is steady at whatever rpm. If it does, then you're looking at something else, like a throttle position sensor. But sensors throw codes if they're bad. Fuel pumps don't.
