Default temperature gauge problem

Hi from Perth Western Australia.
Im the second owner of a ex ambulance 4.9 f150.
Its in great condition and is slowly being turned into a campervan.
I have replaced the thermostat and thermostat housing the radiator is in great nick and the watepump works fine.
The coolant is new and clean and I've put in a new temp gauge sender unit .
The thermostat is a 195' and opens and closes as it should but the gauge reads very hot.
I've earthed the gauge cap and it spikes all the way to hot so supposedly it's not the new sender thats bad .
Can anyone tell me if the gauge has an earth wire running to it or if they have any other ideas why the gauge would be reading this high. Thanks for your help. Cheers.
