what does a 460 generally run at temp wise

i put in new radiater, water pump now my temp goes from 200 to 215 then back down its up and down, why would that be

You're seeing the temp change as the thermostat opens and closes.

Basically the thermostat is supposed to keep it very close to it's optimum operating temp - with the small blocks Ford put in 192 degree thermostats. But there are different ones you can buy, commonly from 180 to 195, so you can fine tune the operating temp if you think it's running too hot or too cold.
