I can figure out what's wrong with my 305 with a compression gauge and vacuum gauge just as well as I can hook up my obdII reader and try to figure out what's going on.
On a street Rod Id prefer efi but on a trail rig where simplicity is great I love my carburetor

I have to weigh in here. My dad used to always say "new vehicles are so complicated, so hard to work on"
Well that's sort of true, for someone who is stuck in the old days. I got a carb on my 1991 Bayliner Mercruiser and I hate it, stupid thing is always needing attention (cleaning/tuning).
I've never owned a carb land vehicle and you know what? Only thing every to break on those fuel system is the fuel pump. Only tuning up is the plugs/cap/coil. Mind you I only have about 14 years experience.
EFI>Carb!
I always laugh when my dad gets amazed when I scan for a engine code and know whats wrong just from a computer, he thinks I'm so smart LOL.
But anyways OP it comes down to what you are comfortable with!

I'm looking into rebuilding my 351w also and I'm thinking about going carb just cause I like the look. It's mainly gonna be a weekend street/strip driven truck.
You'll never get a definite answer on what's better efi vs carb, ford vs Chevy diesel vs gas there's always debate on what's better. Go with what you like.

Maybe to many trucks?
If you have an E4OD you guys do realize you need a standalone computer for it to work correctly if you put a carb on it.
Most people know my opinion. Efi everyday over stubborn carbs.

And I am saying this because I have had sensors crap on me and malfunction. I only could find what the problem was through a obd2 diagnostic tool. With my carb I can usually easily see what the problem is and fix it with a wrench in two minutes.
