Default 300 6 coolant laying on top of head

I have a 92 f150 with a 300 6 that I restored and when I took the valve cover off to paint it and replace the gasket i found coolant laying around 4 of the head bolts and "carmelized" oil on the rocker arms and on the inside of the valve cover. What would this be?

I'm going to get a flush and fill on the cooling system of the 4.9L in my '95; first time I've ever done this. I've heard horror stories about flushing a hot block with cold water and cracking the block. Is this a serious worry anymore? Planning to have the work done at a Meineke shop.
