Foglight Retrofit Project
I'm looking at maybe undertaking a fog light retrofit on my '12 F150. I've been in contact w/ the knowledgeable people over at theretrofitsource.com and they've suggested a package w/ the following components:

MIni H1 5.0 Bi-xenon projectors (LHD)
Morimoto 3Five Ballasts
Morimoto 3Five Bulbs
H10 Relay Harness
Mini Gatling shrouds (smallest ones we carry)
Comes out to $270 shipped.
Anyway, as a lighting neophyte and somewhat flawed handyman, is this something that I could take on without too much difficulty? I don't want to get into too much modification of the stock housing and the like...I'm hoping for basically a "plug and play" install.
Go forward or back away slowly?

I'm not too handy, either. So I prefer plug-and-play. I've yet to see a vendor offer something for foglights that is not too far beyond PnP. The kit you linked seems to me to be quite complex, not sure how easy that would be.

Check ebay for a set of Fusion projector fog lights. I bought a set for less than $90 dollars and they are very good projectors for the money. The best feature about them is they are "stand alone projectors" which means you won't have to fit them into the housing. Just take your old halogen housing out of the bracket, trim the back of the bracket for clearance and bolt the fusion projectors in. I made a thread about this a week or two ago, I would link it but I'm on my phone and unfortunately we don't have that function. Just scroll down the lightning section and look for the Fusion Fog Light Retro title.

There is a 0% chance that the MiniH1 will fit in your '12 fog housings, impossible. I have the big ol' square fogs and it took an incredible amount of cutting and modification for me to fit the miniH1, I wouldn't ever do it again.
Your best bet is the matchbox projector, which is currently out of stock. Fusion projectors can work as well, but these will also take cutting and modification. What I tell most poeple is that fogs should just remain halogen, you don't want a crazy intense foreground.
Retrofitting the MiniH1 in the main headlights would be much closer to "plug and play" then messing with the fogs.
