I'm gonna get to the point, leave feedback for later. How do you adjust the projectors horizontally? Is that an option. I know how to line up the beam but it's a bit off and bugging the hell out of me. Seems as the line in the center has a curve no matter if I go up or down. Is there a chance they were sealed a little off where the two line won't meet up properly? Pic below

I'm not sure if I know exactly what you are getting at.

Do you mean that the two "steps" don't come together? If that is your question, they aren't supposed to. The two lights each have a shield inside with a notch that produces that step. Since the two lights are obviously spaced apart, there is the space in the middle where the two light patterns come together. Yours looks just like every other projection HID setup. See below for reference:

Adjusting what? You can only adjust the lights vertically, which you said you already know how to do. Any adjustment to the projector itself would mean opening up headlights themselves.

But if you think there is an issue with the headlights (which I don't see) you should probably get in touch with Tux since he is the one who built them for you. He would know better than anyone how to fix an issue, if there actually is one.
