I'm looking to upgrade to something that will match my fogs (Morimoto XB LED Fog lights) and be significantly brighter than factory HIDs

So far on TRS I have found what I THINK I'll need, however I'm not entirely sure if there is anything else I would need or anything that would be better than what I have currently picked out.

Projectors: EvoX-R Bi-Xenon
Ballasts: Morimoto XB55 (50W)
Igniters: Morimoto XB Igniter (AMP)
Bulbs: Osram 66240 D2S CBI 5k

Is there anything that I'm missing or something that could improve this setup??

That's probably the ultimate set up for upgrading factory HID's, and is relatively easy to do since the new projector bolts right in place.

You will have to figure out a cover for the hole left by the factory ballast. You will also probably need a conversion harness of some sort since I think the plugs are different.

Is there a place where I can pick those up or would I need to fabricate them?

ProjectoRetrofits apparently has them, but many members (myself included) have had less than stellar experiences with the owner Joseph.

Other than him, I am not sure if there is an off the shelf supplier. You could try calling Dawson at RaptorRetrofit, and see what he uses to block off the holes.
