All I have towed so far is a 1,980 pound Uhaul trailer with probably 1,500-2,000 pounds of furniture/boxes inside of it.
I have 3.31 gears in a SuperCrew.
It handled perfectly fine.
My mpg was 13 or 14 (honestly can't remember now) but had quite a bit of stop and go on a 170 mile drive. Acceleration was definitely slower than normal, but still had plenty of power to pass and merge.

Truck: '16 F150 Lariat 2.7L Crew, tow & payload
Tow Specs: 3.73 gears,9.75" ring, Tow Mirrors, PTBA, Tow Package, 8200 Tow Rating, 6750 GVWR, 1718 Payload
MPG towing: 12-15
Equipment: Equalizer WDH (1200# bars)
Performance: Amazing. Up 8% grade in 4th @ 55-60mph. Stayed in 5th until halfway up.
I've had two rows with it so far but have a lot more this summer coming up. Will report as time passes
I get 22-24 MPG on my daily 90 mile commute back and forth to work in LA traffic. Love this truck.

I have a 2.7 with 3.73 locker, tow package, payload, XLT, super crew. Pulled my offshore boat this past Saturday 180 miles. Boat and trailer are about 4500 dry. Had a full 80 gallons of fuel, about 300 pounds of ice and gear, and another 500 pounds of passengers in the truck. Around 5800-6000 lbs. Towed great, plenty of power, held gears very well, never shifted below 4th while climbing up steep hills. Trans temps never got above 201. Made 11.5 mpgs on that trip and was driving it hard because I was trying to make it to the boat launch to hit prime fishing time. I'm very happy.

This winter I got a new 2015 F-150 - SCAB, Lariat, 2.7, max tow pkg: 3.73...but no big tank unfortunately!! and this spring I have towed a 19' Airstream nearly 2,000 miles (with a Blue Ox hitch system). It has handled it great!
Much of it was Interstate but some in Pacific NW mountains, it pulled so much better than my previous Toyota Highlander (great vehicle but not a truck! though the Highlander could park much better with the shorter wheelbase.
- Airstream about 4,000# dry...5,000 on the road, truck #? but figure about 1/2 maxed out on max load.
- 14 mpg (I seldom get over 65 mph and that really makes a difference), I did pay attention to the turboboost gauge - moderating my driving a bit to maximize my milage.
- Acceleration was superb! everything I needed (though remember I don't push it much or pass everything on the road)
- the transmission temp never was a problem (but again this was springtime in the cool PNW)
It makes pulling the trailer a dream (Airstreams pull very easily...not as nicely as a boat but better than virtually any other similar sized travel trailer.)

have you pulled santiam east of salem? my 5.0 pulled fine over it to bend but on the way home i going west on santiam i saw a eco pulling a 5th wheel in the passing lane!

Brute - nope (to Salem/Bend), ours has been: I-5 to Columbia Gorge/Lower Deschutes, another trip to Eugene/Florence/Newport, and lastly I-90 across Snoqualmie - all from home in Port Townsend. Plenty pass me, probably with 5.0's!, but I get "there" soon enough. Now planning a trip to eastern Montana to visit my Dad - I will get to check the mountain towing on that trip but do not expect any problems.
