I was thinking of a piece of 1/2" I.d. steel tube, pipe etc. (Pretty sure it's a 1/2 stub). I dunno, maybe its not a great solution, just thinking out loud.

I found a 8" piece of 1/2" inner diameter iron pipe at Lowe's. I'm thinking that will work, I just have to find a drillbit that will be able to drill through that iron pipe

I just went and looked at the side crank jack in the link posted by your first responder (xcntrk) and that would probably be the simplest and neatest solution. It looks like a direct bolt-in and 28 bucks isnt bad.

Drill motor. I picked up a used 14v dewalt drill for $15 and got it hook up.
I figured this will be the best way to go because it would be more of a deterrent for trailer theft because the person who wants to steal my trailer would have to have a drill with them. also when I leave my trailer at the house I always have the Jack at the maximum height which is well above 99.9% of the hitches out there so nobody would actually be able to take it. Plus with the drill I can raise and lower the hitch in about two seconds versus a couple of minutes of hand turning it.
