Towing with P Rated tires - Good for a few days?

As noted, your tires are usually rated higher than your payload.
People overreact to P tires for towing. LT tires will give you some more control but P is not some kind of danger factor.
Tow and enjoy and no need to rush the LT tires when you purchase your own RV. Run you P tires until you are no longer comfortable with the tread then decide what you want to do.

I pulled a 4950#, 24ft TT across the country on a 7,900+ mile journey with a 2005 F150 5.4 Triton XLT SCAB 4x4 with 6.5 foot bed and P rated tires.
I had no problems. I did air up the rears to the max sidewall pressure. 44 psi if I remember correctly.
