Tow/Haul button on a NON-tow package truck, what's it do??

Yeah, I was using the term "paddle shifters" in a broad sense. The F-150 with SelectShift tranny has a +/- rocker switch, which acts like a paddle shifter, but that rocker switch is not as convenient to use as the true paddle shifters in my Miata. But without the SelectShift tranny, you don't get the "M' range or the +/1 swich for manually shifting gears.
I've also driven several vehicles with the paddle shifter.
Never saw a Ford pickup with a paddle shifter.
I used the SelectShift frequently when towing with my F250. It worked the hills a lot better if I locked out 6th gear, and manually down shifted to 4th gear at the bottom of a hill instead of waiting for the tranny to do it.

From the 2017 Order Guide for XL Standard Equipment:
- Electronic Six-Speed Automatic Transmission with Tow/Haul and Sport Mode (NA w/3.5L V6 EcoBoost®; std w/3.5L V6 Ti-VCT, 2.7L V6 EcoBoost® & 5.0L V8 engines)
- Electronic Ten-Speed Automatic Transmission with Tow/Haul and Sport Mode (std w/3.5L V6 EcoBoost® engine)
- SelectShift® Automatic Transmission with Progressive Range Select (NA 3.5L Ti-VCT engine)
- Electronic Ten-Speed Automatic Transmission with Tow/Haul and Sport Mode (std w/3.5L V6 EcoBoost® engine)
- SelectShift® Automatic Transmission with Progressive Range Select (NA 3.5L Ti-VCT engine)
The Raptor gets true 'paddle shifters', but the same 10-speed transmission with the same capabilities, except that the other F150s will have the +/- buttons on the column or floor shifter instead of paddles.

Just for the record, my mother's Lincoln MKX has paddle shifters...
I don't like them any more than the +/- buttons. But my previous rig had a big steel stick coming out of the floor board that would vibrate and shake as the truck idled and push to one side when getting on the throttle, oh and 4 pedals.
