Personally I would say go for 10k GVWR instead of 7k. That way if you need to pull a truck or 4x4 you have the capacity (granted your tow vehicle might not, but trailer can carry the weight). Also I would install a WD hitch regardless of size and if enclosed add sway control.
That's about what I was going to say!! I went with an 18 foot open flat trailer. Works better for my needs. As for hauling motorcycles on it there is a video on youtube for motorcycle wheel chocks that are held on with straps and not bolts so you can move them around more. Sorry I can't find it right now. Also I would watch going to heavy on a trailer. A local company got in deep trouble with there 1 ton pickup and 10'000 lb trailer. It puts them into the CDL weight class and non of them have a CDL. I know with your half ton and a 10 k trailer you should be fine

I see you are in PA. I'd suggest a dively econotrailer. They are in PA only a few hours from you and you can pick up right at the factory or they deliver for free. I bought one when I used to live in PA. I've actually owned 2 of their car hauler trailers. Both towed perfect, totally satisfied with them.

Check out PJ Trailers, I'm looking at the super wide buggy hauler 102" deck, tandem 5,200 axles 4,000lbs rated drive over fenders,18' flat w/2' dove. It's about 2,800 lbs of trailer, but the length will allow me to haul about anything I would like to haul.

I'd suggest an enclosed trailer. That way you aren't advertising what you are hauling. You'd be less likely to be stopped.
