Take it to a CAT scale and weigh it. A couple of runs through will give you the truck weight and truck+trailer weight (with WDH bars slacked), and you can calculate the trailer and its tongue weight from that.
To reduce sway keep the trailer's tongue weight at 12% or more. And make sure you've got the WDH properly adjusted (reduce front end lift by 50 to 100%).

Unless your doing some real boondocken, most camps have at least a potable water fill station near the checkin. Worst case load the nose of the trailer with gear. By the way I find it interesting that your fresh water tank is at the rear. Most are usually at the axles. At the axles the waters movement tends to have less impact on handling when it sloshes around. Also when you fill it, fill it full, again it will lessen the effect of the water moving by minimizing the amount it can move.

We use the camper to stay in when we go on 3-4 day atv rides, so theres not much ammenties available.. I thought the same thing about the water tank placement, the grey/black water tanks are equally placed on the side of the axles. Fresh water is in the very back, definatley no that because I had to patch a pin hole in the bottom of the tank.
I'll start topping in off hopefully to minimize the sloshing around, & will testing different settings on the WD bars since the closest access to CAT scales to me is 100miles away (I-10 TX/LA Border)
