I have the AirLift RideControls and have used them quite a bit just for things like camping. As you said, these trucks squat pretty easily, even just putting a bike rack on the hitch with a couple of mountain bikes and the dogs in the bed requires me putting a bit of air in my bags to keep the headlights from blinding people.
I did fill my bed with crushed stone one time when I was clearing out the flower beds at my house. The landscaping place down the street wanted them so i drove them over. The ridecontrol bags supposedly lift 2000 lbs and I had them fully inflated to 100 psi but the truck was still squatting which meant I probably had 2500 lbs in there. The bags did help though and kept the truck off the bump stops.
