Question What did I just experience...

I had been driving all day (75-80 mph) and I came across a straight stretch in the road so I decided to put the hammer down. I have never done this before. The truck downshifted and just sat there. No real increase in speed. After 6 or 7 seconds, I let out of the throttle and hammered it again. It kinda did the same thing then all the sudden it accelerated.

I ran her up to 100 and then let it slow down. When I hit 60 I hammered on it again. It downshifted and sped up to 100 again with no issues. I did it one more time with no issues.

When the "issue" happened there were no check engine lights, and there was no hard shudder. It had been raining all day and the temps were in the 40's or 50's.

What do you think occurred?

I should add. During my trip I also experienced this while passing a vehicle. I had to give it some throttle and it accelerated but it didn't do it very fast. I made it around the vehicle and resumed my cruising speed. I brushed it off and continued with the trip. The truck ran and drove fine. Accelerated up hills with no issues. I used cruise 95% of the time.

I just read the article online. I figured I would have experienced a shudder, and not just a power loss. Guess I am wrong.

It doesn't matter what the humidity was, he stated driving all day at cruise speeds. This is when the condensation builds up regardless. Has your truck had the TSB done to cover the Intercooler? If not there you go. My 2011 hasn't had the TSB and I don't want it... but that is supposedly the cure.

Sounds more like an electrical issue than the condensation issue. Your drive by wire system may be acting up. I had an issue with a connection on mine where the truck would feel numb when I accelerated.
If it were condensation, the engine would have revved up first then sucked the water in causing it to drop in power and you would have noticed the cylinders cutting out by the shudder.

I had a friend with the same problem on his diesel Mercedes GLK, it ended up being a cracked CAC pipe causing a boost leak. You might be experiencing some sort of boost leak, perhaps a faulty blowoff valve.

I have had the truck since January and I know I have not had the TSB done.
