So today I checked my oil level in my truck and while checking the dip stick I noticed that the oil had a really strong gas smell to it. I never noticed it the prior times I've checked the oil, Is this normal? I have a 2012 ecoboost the only mods are an AFE CAI and exhaust.

There are lots of threads about this. This is a normal occurrence with direct injected engines. How long has that oil been in the truck? How many miles I should say?

When you change the oil you can send it off to Blackstone Labs and they will test your oil and let you know where it stands and if you need to change your oil change intervals or what have you.

Normal, my truck does it and the ford dealer gave me a ecoboost truck to drive while mine getting serviced and I checked it and it smelled like gas as well .. I changed my oil per the oil life monitor but I decided to recently start changing at 5k

My oil analysis from blackstone labs shows higher than normal levels Of gasoline. He instructed me to change it at no longer than 5k miles and that was amsoil with amsoil filter.

IMHO, as long as the oil level doesn't start rising, your good. You may want to get an oil analysis to be sure though.
