is it ok to run the 87 & 89 Performance tunes with 93 octane in my tank?

Yes. But you will see the most gains with the 93 performance tune running 93 oct.

As long as the octane in the tank is equal to or higher than the tune, you are fine. I run 87/89 tow tunes and put premium in the tank for towing. Otherwise, I match the tune to lower fuel costs.

i'm sure you wouldnt want to run the 93 tune with 91 oct in the tank. Dont know if it would cause damage or not, but probably not a good idea.
Has anyone done this?

You can run a higher octane than what the tune is. As long as the octane is higher than the set tune you are fine. The computer will adjust for it.

But do not in any circumstances run a lower octane with a higher tune period. You will get engine knock.
