I also live in Texas. I live in Leon Springs, and drive to Corpus Christi, the hometown, all the time. In the hills between here and there. So far, one trip down, head on into 20mph winds the whole way with gusts to 30, got 17mpg. That was the worst I have gotten on 87 octane. The trip back was the best, with a light tail wind the whole way, got 18.5 mpgs. Both of those on 87 octane regular.
I get over 20 mpgs on premium in city driving, and can't will be trying that out on my next trip down. Should be good.
I detailed out my tank by tank results in another thread, regular, versus premium, versus ethanol.

Both of you, and everyone else should run the cost per mile when buying premium. Just as an example 3.10 RUG at 17mpg vs 3.60 Premium at 20mpg is the same cost per mile.

I get about 17 and change running 75 and ~18.5 running 65 with 275/60/20 (33s) all terrains. I got about 1 better on the factory ATRs. That's also with about 300lbs of crap in the bed...
Can you not take a truck with each engine out on the hwy and run 70-75 to see what it will do? Granted each might get slightly better once you have a few thousand miles on it but that will give you a good idea.

This is pretty close to my experience as well. I have 3.73s and tend to get a little better gas mileage with 91 fuel. Really good compared to the 14-15 i saw at about 70 mph with my old 2004 5.4....

Like most here, I'm still seeing 21 on the hwy at 65mph. Total mileage since new is 16.9MPG, and I do alot of hunting/hauling quads that just drinks the gas when I'm idling around.
I've been running 91 octane for 2 months now, and I have come to the conclusion that it really doesn't improve my mileage in my normal driving. However, I definitely get better mileage under load when dealing with hills/mountain passes. It is enough that it makes up for the difference in the cost, and I enjoy the added power. On hills where I'd normally downshift to 4th, I'm holding 5th. On hills that I'd normally shift to 5th, I'm holding 6th.

I have a 2011 5.0 4x4 with 3:73ELD the best i have ever seen is 23.4mpg at 75-78 with a really nice tail wind from FT Campbell KY to Houston TX (about 760 miles) but i normally get on that drive between 18.5-21mpg at 73mph on cruse just depends on the wind. Around town I only get between 15-17mpg (depending on if my foot is made of lead that day)

2013 FX4 3.73 5.0...with just under 1000m towed an empty 18ft flat bed car trailer (~2.5klbs) from Vegas to Biloxi, roughly 1800m. Averaged 15.2 mpg. Return trip trailer loaded (~6Klbs) 13.8mpg. I was/am very impressed with this motor. Traded my 2011 Ecoboost for the 5.0. Both are awesome! forgot to add speeds....right around 70mph both ways.
