Same problem...New solution...
I have replaced the CHT sensor a year or so back and just started getting the P0125 cel...Checked the coolant and it was a bit low which is a concern but I pulled out my scantool and found the ECT temp would not go over 158F....Very strange...
I have not replaced the thermostat in more than a few years so it will get replaced this week...Oh and I have cabin heat and the temp gauge goes up to about 1/3 scale from full cold and normally it would go to just below half is like 5 minutes so I am thinking the t-stat is weak or stuck open...

But I know the P0125 get's set that way because my truck throws that code all the time with my 170 thermostat. It's installed correctly and the coolant temp sensor works. Only my tune is calibrated for a factory thermostat. I haven't bothered to fix it yet, but my x3 will show ECT temps right around 168 - 175 and if it stays at those temps for several drive cycles it throws a p0125. There is def more science to it than that, and i don't know the exact temperature threshold or how many drive cycles it takes etc...But i do know if you have the wrong temp thermostat it will cause a p0125. That's why i suggested to check / replace the thermostat before replacing other expensive stuff.

There's definitely more ways than one way to trigger that DTC. I agree, that makes perfect sense, - good post!
