Is it better to get 360* beam angle lights or does it really matter?

Depends on the application. For gauges yes, but for the dome it don't matter.

For the dome lights I got 16 LED panels because you don't need 360 degrees of light. I just put them in and aimed them down and it spread the light out in a pretty wide pattern, just not so wide the light scatters. The ones in the doors however have LEDs on every side
