The SCT tunes for the 5.0 is the 87, 91 and 93 octane and be looking at gains of about 15 rwhp and 30 torque increase and that's gonna be on the 93 octane tunes so prob looking at 2-3 less for the 87 octane tune. ( assuming truck is stock )

But biggest different you will see from a tune, either a preloaded tune or custom, power gains aside, is how it will remap the shift points of the transmission so much quicker and smoother shifts then before and elimates 95% of throttle lag.

Let me know any other questions, glad to help!

I'm using that tuner on my 2011 3.7 V6 and the biggest difference is in throttle response. MPG is up a little, maybe 1 or 2 mpg. Engine starts up quicker and feels a little peppier. Changes are subtle, not earth shaking! And yes, I'm on the 87 octane tune! Haven;t tested for more torque yet but I should get a little more there also.
Hope this helps!

Can one of these tuners compensate for a 34.2 inch tall Tire on a 2013 5.0 4X4 F-150?

Yes, adjusting for tire size is an user adjustable option for SCT programmers.
