Default New tires

So I want to put new tires on but I'm in a bind. I want to put coopers ats 275/70r18 on buti was told by the shop they may rub with my custom wheels with +18 offset or even rub with my mud flaps. So I called the dealer and they said they would rub and would be trimming to fit. Anyone here have any problems because I have googled a lot and I see a lot of people running them With no issues
