Not to be rude but I don't think I would be the first to do things to their vehicle that weren't cost effective. I believe everything is in the eye and imagination of the beholder.

Would the manual transmission from the 4.2 V6 hold up with a V8?

If your son is of driving age, or soon will be. Keep the truck as is and give it to him as a first vehicle. It has low mileage and is well maintained, and we all know that these can hold up to a fender bender or two. Then get yourself and him a good project truck or car.
