You ordered the square X-Lenses, so you must choose a square shroud - in this case the "Gatling Gun 2.0 Square".
Otherwise looks okay. I'd recommend you also order the butyl - yer gonna need it.

Is there a reason not to pick the xb55's?
Also are the shrouds just for looks? Or do they have a mechanical purpose?

I was unaware, should I use the 35w kit? Or bump up the heat level to 5000k? I want the most usable white light possible. I prefer none of the cheesey blue stuff.

No problem with the projector syle choice (X-lens, which is a square lens). But you need a square shroud to match - a round one won't fit.
Yer selection as per yer post was a round one - go further down the drop-down list and select a square variant - they are marked as such).
Shrouds are cosmetic, mostly, as well as blocking stray light from open-framed projectors. And they can house ghey-lo's. Without one, think 'Terminator', lol.

As fer XB55's, yer call, but they sacrifice ~ 20% ballast and bulb life fer ~20% increase in output, AND color-shift the bulb kelvin rating down, as mentioned by TLM.
35w is plenty, runs cooler, has longer life and you'll preserve the bulb's color. Expect the bulb to color-shift upward with usage ( they all do eventually, with OEM/Hi-Zoot bulbs doing this the least) - leave it @ 4500K - you'll like the color I'm certain.
Start saving fer some premium bulbs - the difference over the standard XB's is ..... significant . This is one of the many benefits of going D2S in the first place - the choices.

Either use 35W ballast with 4300-4500K or 50W with 5500K, you'll get about the same look for both (but brighter and not as long lasting with 50W).
