Offroad tire size
I have seen and read all about the 35 in tire fitting on a 4wd w a 2.5in lift with little or no rubbing. The question i have is if that means just road use or is it accounting for suspension flex during off road use?

Perhaps the realignment wasnt done correctly which didnt complete the leveling of the front end, I dont know but I know they rub.

I dont see how a 35 wont rub. I have an 05 XL Super Cab with a 2.5" leveling kit. Tires are 325/60/15. They are 33.4/12.9/18. They rub on the cab side of the fender when I turn the wheels. I could imagine a 35 rubbing a ton. Perhaps the realignment wasnt done correctly which didnt complete the leveling of the front end, I dont know but I know they rub.

If you compress a strut enough, it will rub with 35's and a 2.5 level.. From my off-roading experience with 35's and a 2.5 level I've only encountered rub once...When turning the wheel while the front dives down into a mud hole. but its only slight rub on the inner fender liner.. Under very harsh driving circumstances..... . Nothing to worry about.
^ This is on a stock strut with a auto spring 2.5 level and general grabber red letter 35 x 12.5 R20

Mine rubs on the inner fender as well but it isnt bad. I can deal with it.

I have the same size tires with -12mm offset rims and they rub slightly as well.

The rim lip is only 4" to the mating flange of the hub.. I'm technically a +1" offset.. Edit..

I do lot of trail riding in Arkansas and the terrain there tends to flex the suspension pretty good and I've seen guys that run tires that bind and rub under flex that adds that little extra resistance to keep it from going over an obstacle. That being said im trying to go with the tallest tire possible for river crossings yet smallest lift for center of gravity but still have most if not all of my suspension travel. And please don't say "shoulda bought a jeep" because my buddy has one and somebody has to carry all the camping gear.

Im actually thinking about going with the 315/70r17 treadwrights which is a 34.7 in tall tire 11.5in section width on 17 x 9 in rims. Just don't want to make that $700+ mistake.
