I have an 07 with 18" rims I want to go up to 20" but was curious about what this would do to my ride height?

The rim diameter has nothing to do with ride height. If you get a different outside diameter tire that will affect your ride height.

nothing if you get the same size tires except with bigger rim size of course the ride height will change if you change the size of the tire not the size of the rim. You will just have less rubber and more rim.
