SOLVED! (I think)
I took out the dimmer switch today, opened it up, but couldn't see anything wrong with it. So I plugged it back in a tried to replicate the problem. I found that if I wiggled the pigtail in the plug, the interior lights would turn on! I tried moving the dimmer wheel at the same time, and it didn't really make a difference. So, a new dimmer switch wouldn't have solved the problem - or maybe just for a couple days as Hot00frb experienced.
So, I put it all back together, but before I popped the assembly back into the dash I used some electrical tape and taped up the connection between the switch and the pigtail. So far so good. I'll update if this changes.

Not great. I forgot to update this thread, but my earlier fix didn't solve it. However, I recently took my odometer cluster out and it is related to the cluster somehow. So much so that if I press the button in the cluster to toggle between trip meters, or just wiggle the button, it will trigger the interior lights to flash on and off. So, who knows... I could get as new cluster, but I haven't bothered yet.
