I'd go with the longer bilstein if I was you.. They do ride perfect, that's why I overnighted another set to replace my damaged bilsteins..

With the new HD coils, my truck is sitting higher than ever up front now (nose high). I might buy a 3" block to level it back out.. My 35x12.5 r20's are completely rub free lock to lock, and I also cured the slight rub I got when backing up with the wheel cut.. Handling is also much more nimble, so from this point forward I really have to suggest everybody replace their coil springs when going with the bilsteins.. The Moog HD coil is 10 coil wraps vs the factor 9. Same length, just a higher capacity to mitigate sag, settling, and improve handling.. The steering response alone is why I'd highly recommend them, besides the fact that stock coils are well known to break..

If I was you I'd possibly consider a set of icons, foxes or even kings... They are north of -$1000 to about $1500. But in all honesty the ride and travel will probably make the bilstein feel like a crappy Monroe..
I almost went with the icons for a replacement, but they were going to take far too long to get while my truck was disabled..
Foxes only lifted 2" and were probably going to be a rough ride fully cranked.
Kings would have been made to order, and probably would lift close to 3". But I'd rather get a 4" lift first, than order the Kings to match..

For right now I have the bilstein adjustable shocks order. I already bought both upper and lower c arms. So I should also buy the springs while I'm at it?

Yes..
These are the springs

You will need to reuse your old struts bottom spring perch..

Set your bilsteins to zero lift if your going to run a spacer.. Otherwise the bilsteins lift 2 inches, which wasn't enough lift for my 35" tires..

I might suggest you get some new sway bar end links while your at it..
Lower ball joint is not a bad idea either while your in there..
Last time I went in for this job I just replaced everything..

Struts
Ball joints
End links
Tie rod ends..
I think I spent around $1000 in parts.. For both sides..
In hind-site I should have just freshened up the springs and strut mounts too.. (Live and learn)..

I'm planning on running some 295/70/18. Should the struts be enough to clear the tires?

It's gonna be close.. Personally I wouldn't chance it.. They might rub in certain scenarios..
