I actually left the pavement today...
I've not been able to make time to go up the mountain in more than a year, so today I put the kids and wife in the truck and headed for the hills. I was itching for the opportunity to see how she'd do in the gravel and mud and maybe even some snow. We found a bit of all three.
My truck is bone stock, and I haven't even changed off the tires for All-Terrains yet, but I was very pleasantly surprised with suspension articulation and approach angle, performance ascending and descending an icy hill.
My only question is this: with a wider 305 or 325 / 65 / 18, will I still be able to get that kind of axle movement without banging tires into the wheel well (with or without level kit and add-a-leaf)?

Where did y'all go? I went up and played in the snow at off I-90, by Denny Creek..... Saw quite a few people up there, just playing, running some of the old trails......
Looks like you had some fun......
Honestly, I didn't have much axle movement or any wheel well issues and I was playing a little hard too.... All I have is a leveling kit on mine.

If you go out Mountain Loop Highway from Granite Falls, follow the road about 15 miles and there's a turn-off for Mount Pilchuck. Mostly leads to hiking trails, but there's one pretty decent trail with some muddy sections and lots of moguls. Couple of goat trails too, but looks like they haven't seen much action lately, and I figure I'm too wide to make it.
There's good camp areas in the vicinity too.

305s might do the job though, not too sure on my part.
