Depends how often you use 4x4 or if you have submerged the front diff. That oil would be brand new if you hardly use 4x4. But if you've ever dunked her under water, you might want to change it for piece of mind.
I just changed my rear diff oil along with a new pinion seal. I used Royal Purple 75w 140 and the Ford Friction modifier. Took just over 3 quarts.

How hard is it to remove the skid plate? Any surprises that I should know about?

Easy to take the skid plate off. You will need some long extensions to get to some of the top bolts of the front diff but over all pretty easy. Takes a little finagling to slid the cover off. Same as rear diff use permatex to seal it back up. Front takes 75w-90 2 quarts should be enough, no additive needed.

im pretty sure my 9:75 W/ 3:73 LS holds 5.5 pints which = 2.75 quarts - 4 ozs of friction modifier..
