IDK too much about dash mods besides changing the light colors and putting some lights where your feet go. I know a person on here a while ago put some vinyl with a design on top of the dash all the way to the wind shield. Maybe do something with the monster theme also.
For leveling, if your lift allows you to put a level on top then 2" or 2.5" should be fine, may want to check and make sure with a shop or someone who has the same lift kit you do. It looks like you are already higher in the front then you are in the back so If you do level I suggest do an add-a-leaf in the back to lift that as well.
