from what i read here on the forum, the gryphon is a rebadged edge unit. so an edge tuner with a aem intake is bad new then?

Yes with 04-05 and some 06s an intake can cause a lena condition (not enough fuel) which can lead to burnt pistons and valves. You need a custom tune and and Edge cannot be custom tuned. It must be converted to a Gryphon by PHP.

how about our '07's? any issues with running lean with a CAI?

I haven't heard of any, but most of the tuners will tell you without a tune you will not see the small, but full advantage of the CAI.
