Battery problems
I have a 07 F150 5.4L, recently my dashboard went out all lights still worked, headlights and taillight a still function. Basically everything but the dashboard.
I checked all fuses and all were good. After I plugged them back in, truck ran fine for bout a day, then my battery gauge was reading around what looked like 16v.
I had my alternator replaced round a week or 2 ago

What kind of alternator did you put in it. Almost positive you got one that's defective.

Like Techrep said, I've read lots of posts where rebuilts have failed them. Much of it usually has to do with them being the smart alternators... When the old alternators fail, I think they replace the brushes and such and ensure it someone charges however they don't charge the smart alternator circuitry. This generation (and most newer vehicles) of F150 uses the smart charging alternators which are PCM controlled. The PCM looks at several factors: temperature, load, etc then adjusts the charging rate automatically.

You could watch your battery level and indicator for a bit and see... chances are though, if it's happened already, it may come back again. I'd say check for a loose battery terminal but then you'd likely have starting issues as well. If you can though, check the connections are good. Definitely keep a close eye though, I'm not a fan of voltages hitting 16v... not good for electronics. Even if they have voltage regulators in them (stereo, etc), the voltage regulator will generate more heat risking burning it out. Don't drive long at a high voltage if you can avoid it (even though the electronics might seem "ok").
