The truck was running when it dings. It takes the same amount of time for the dinging to start as for the seatbelt dinger (they alternate) then the seatbelt stops. The ding goes on for roughly a minute and will repeat after about 30-45 minutes of driving. I do not know if the PATS were bypassed/how. The alarm had remote start and security and the same shop that installed it removed it

I am leaning towards something with the PATS system but am not 100% sure. If the shop that installed the alarm also removed the alarm I would bring the truck back for them to chase it through(I expect 100% satisfaction & completion when I hire work out-you ALL should, too).
Properly installed or properly removed=zero issues, the truck and all its idiot lights and chimes should be 100% like stock. Double check wiring. Because you didn't install it you have no idea where all of their splices and taps are, or how they prepared and sealed on removal. I know there is a wire or two that goes up to the ignition switch, some to the headlight switch, one for brake and then there were a few that needed to connect with the door triggers and BCM. They may have gone under the hood for some of the wiring for power or ignition sense.
Are there any pending codes in the ECU? You could drop the cover for the steering wheel and take a look at wiring there. The chime lives behind the dash cluster so if you want to nip it, that's where it's at.
I honestly would take it back and have them resolve the issues, chasing wiring gremlins caused by others is not how I like to enjoy my time

They broke the window to get it. Alarm was all cut up so we just had it completely removed. They stole the batteries, K&n intake, etc. as soon as we got the battery and filter and taped off all wires and started it, the "mind" of the viper alarm was still going off. Lights still flashing, horn still going off. The dinging was going on while alarm was still in the truck in pieces. Is there any chance at all that it is coming from the airbag sensor that I showed in the video?

Not what I wanted to hear did you cut the wire or just unplug it? Because mine is cut. Guess I'll start looking into PATS
