Default 2014 5.0 engine over temp msg

Helping a good friend diagnose an issue.

2014 5.0 with 90k miles…..got a engine over temp msg / followed by fan running full last for 3 minutes / then the temp gauge spikes

no CEL and no stored DTCs on my reader.

assume cylinder head temp sensor? Is that the sensor on back of engine block that’s a PITA or is that coolant temp sensor? Anything else to look at?

I'd think thermostat first.

I mean, I'm assuming someone checked the coolant level.
