Who has gone 3.5EB to 5.0 or vice versa?
Price of new trucks I am considering does it make sense to replace my 2013 with a low mile/without rust similar/same truck (2013 fx4, leather but not the appearance package, current supercab consider crew but have to be 6.5 bed, level on 275/60/20). I'm 120k+ EB without major issue, I like the tq and whistle but do have the off stop hesitation and infrequent startup noise (sits for days). Considering should I consider or even target a 5.0, wouldn't mind some v8 rumble but not enough to give up real performance and/or reliability. Also real world mpg with same driver, I get 14ish 75-80 on highway and hills off highway. Who has switched between the two?

My neighbor just traded his 2013 with the 3.5 EB for a 2018 with the 5.0. He bought the 2013 used about 3 years ago.
I hate to be "That Guy", but he told me that he had all sorts of issues with the EB engine. He finally gave up on trying to fix it and specifically sought the 5.0. He started having issues at about 150,000 miles.
IMO if you get the 5.0 with 3.55 gears and 3.73's are even better, you won't miss the power of the 3.5. They upped the power ratings on the 5.0 in 2017 or 2018. That combined with the new 10 speed should be a good combo. Just stay away from anything with 3.31 or 3.15 gears.
My 2014 with the 5.0 will easily get 17 mpg on the highway, I've hit 20 mpg a couple of times under perfect conditions while keeping it under 70.
I've driven it on several cross-country trips to Colorado and back to GA. I averaged 18 mpg on a Fall hunting trip when I was loaded heavy. I did 19 mpg on a spring trip when not loaded heavy. I got 11 mpg pulling a 4500 lb travel trailer and 12 mpg pulling the trailer to Maine and back this summer.

My 2018 3.5 Ecoboost gives 22mpg on Nebraska Highways running 75mph. Around town running errands 17mpg. South Dakota highways running 85 it drops to 17mph.
I have never pulled a trailer.
