Was there years in this body style that had a drivers a pillar handle? If so I am assuming nobody retrofits them in because of the air bag?
Was building a chevy 1500 online and noted a drivers grab handle is an 80 dollar extra. I figured manufacturers just wanted to nickle and dime us. Steering wheel? Not standard in this trim. $

As far as color goes you could try to match exterior color and black or grey ( sorry didnt pay attention to exterior color). There are tons of options.
FYI these are very bright colors, there are milder better looking colors, this is just a quick search and example.

kodiak brown exterior and blk/tan interior.. So far I havent seen anything that matched interior, but also been busy duck huntin.. be good and ty

I don't think plastidip is your answer.
What I would look into is flex seal. As much as i hate the commercials, that stuff is thicker and makes a pliable, sticky coating. You could brush it on or spray. If you sprayed it would just take some masking and taping time to protect everything.

no backing just straight weld
cuttin weatherstipping, that joint it makes on the seem is tuff to cut, has that steel internally and I used tin snips then smoothed it out with a dremel with a sanding drum.
lizard skin going on, i elec taped both ends but now after some use I'm not convinced I had to do that.
pulled it tight and wrapped as best I could. I was impressed with that stuff, I pulled it rubber band tight.

Nice, OP! That's one thing I really miss is the handle on the driver's side. I had surgery a few weeks before I bought this truck, and not having a handle to grab onto was killing me.
Although I'm fine now, I still miss the handle... so I took some people's advice (forget who, sorry) from the under $50 mod thread and made some paracord handles to put under the headrests (plus they look really cool and match everything else haha):
