No way to do it!!
The system is required by the gubmint. It's like seat belts and airbags - they are required. Big Brother knows best!!!
No tuner will disable them for you, unless you turn the truck into an off-road only vehicle - they'd open themselves up for big liability problems!!!
The answer to your problem is simply to get a new sensor. If the tire/wheel shop lost/broke the sensor, it's on them to get you a new one.

I would be heading back to that tire shop and make them Un-lose that sensor, they are not cheap and now you are aware of the consequences.

I bought my truck used with the tire pressure warning showing. Since I bought it during the winter I figured the dealers were right when they said it was probably because the weather just turned cold. When the warning didn't go away after airing up the tires I took it back. Come to find out there wasn't a sensor in any of the wheels. I made them fix it and didn't pay a dime for it.

A tuner can let you "work around" the sensor, but I don't believe it will help if there isn't one physically there.
You can set the PSI at which the warning goes off via a tuner. Most have it set to 30-35. Anything below that will trigger the light. However, if you don't physically have all 4 sensors, I don't see how a tuner could fix that.
If a tire shop loses something or damages something, that's their own damn fault. Make them pay for it and fix the wrong they caused.
