Default Looking for tire opinions

I have a stock 2010 FX4 with the 20" wheels. I've been lurking here since I bought the truck and have too many ideas for what I want to do with her. I've decided that leveling/lifting and replacing the tires is where I want to start.
I'm more or less committed to Bilstein 5100 adjustable upfront, 5100 and AAL on the rear to lift it about 2" all around.
My problem now is that I'm stuck on the tires. The Pirellis are crap. I'm looking to go 285/60R20 but need opinions on tires. I like the Goodyear Wrangler Duratracs but there isn't a lot of info on these tires. What other tires should I be looking at? I'll be doing about 85% on road and the rest in as much mess as the tires will allow.

I want to be able to take dry dirt trails, some of the easier stuff at Moab, sticky and slimey mud, winter conditions in Utah and possibly some sand. I know I'll have to compromise on-road or off but I'm looking for the best compromise I can make.
