Default Can you help with tire and wheel choice??

I just bought a 2004 Ford F150 xlt 4x4. It has the stock wheels 17x7.5 and I want to put either 285/75r17 or 295/70r17 nitto or toyo on it. I am installing a 2.5" leveling kit and would prefer to keep the tires under or close to the fender. I can't afford a big lift or big tires and want to keep it close to stock both for my wallet and the ride but do want it raised. I don't play offroad (wish I could) but do actually have to get offroad for work so when I need it I really need it. Does anyone know if I can use my stock rims without the tires sticking out too much and compromising the ride? I think the offset is -30 or 40mm. Will they look bad? And secondly if I get new rims which I think I will have to, which size and offset is best for the above mentioned tires I want to use. 17x8, 17x8.5, 17x9?? I am looking at v-tec Warlord 394 17x8.5 12mm offset with either 285/75r17 or 295/70r17. Thanks so much for any help!!
