Wheel and tire recommendation
I have a stock 4x2 '15 Lariat with the sport 18" wheels and they make the wheelwell look like they are too big for the tires. I've never really replaced stock wheels and tires before on a truck or anything for that matter.
My goals are something slightly larger, perhaps 20" and to keep as much of the factory MPG and handling as possible. I despise chrome, so prefer black wheels or some non-polished machined metal.
I don't tow or haul and 85% of my driving is interstate.
I've been to a few shops, but really have no idea what I'm looking at.
Any recommendations or help would be greatly appreciated.

Not gonna recommend any rims because that is completely subjective.
However if you want a 20 stick with P275/55R20 or P285/60R20. These will still be light weight and main ting MPG and speedo. The 275/60r20 comes out at 33" tall so will change your speedo a little but not much. If you want an AT stay away from the new BFG TA KO2 as they are the only LT tires on the market in those sizes except Toyo MT. Those will be heavier and impact mpg negatively.
However if you want a 20 stick with P275/55R20 or P285/60R20. These will still be light weight and main ting MPG and speedo. The 275/60r20 comes out at 33" tall so will change your speedo a little but not much. I do know I don't want the wheel to protrude from the side of the truck.
