I have 4 ohm subs if I go with the 500/1 won't the ohms be to low to be stable on 2 subs?

dual 4 ohms will wire down in series to 2OHM and you'll be fine on that 500/1 they are 4 and 2 ohm stable at 500 watts from my knowledge

500/1 specs:
http://mobile.jlaudio.com/products_amps.php?amp_id=439

250/1 specs:
http://mobile.jlaudio.com/products_amps.php?amp_id=435

I did not mention in my earlier post that I power my 10w3 with a 500/ and would suggest the same.

The JL slash series amps put out the rated power at anything from 2-4 ohms.

that's a bit much on the power for a single w3 imo.. 500 watts is the limit on that woofer to void warranty also..

You can even put a JL 1000 on a single 10w3. Just set the gains to the correct level and your good to go.
Do you need a JL 1000? No.
More power is always nice because the problem of the amp clipping is not a major issue but going WAY past the recomended power is just a waste of money.
JL recommends a 250/1 for a single 10w3 and a 500/1 for 2-10w3's and even 2-12w3's. I'm sure if you would benefit from having a 500/1 on that single 10w3 JL would recomend it to mane more money.

Awsome thank you, I'm thinking I'm just going to go with the single sub so I don't have to move my jack and I really don't need alot of bass anyway

Also you might as well use the 500/1 amp. Tune it properly. That way you have headroom and cleaner sound. No clipping. will the 250 work, Yes, You may want more later........
