Factory 6 disk with aftermarket subs?
I have a pioneer head unit with 2 10" subs. I was told by a buddy that the stock 6disk out of my 05 FX4 would work just fine with the subs. But I was told by a car audio shop that I would NEED an aftermarket head unit. Is this true? And if so how do I do it?

You can use your stock head unit with either an amp with high (speaker) level input, or a line output converter (LOC) ~$10.
While an aftermarket head unit will generally significantly improve sound. It is not required for a quality setup. I've got both my subs and component speakers amped using my stock head unit and an LOC.

I am picking up my new 2011 FX4 that has the premium 6 disc system NOT the Sony. I want to upgrade the system but not the HU. What all do I need to add a amp? Is my truck to new for the piece needed?

You can use either an amp with high level inputs, or an LOC to change the speaker signal to RCA (low) level. You'll need to pull the signal after the sync input.

mud, i also have a 2011 fx4 with the factory head unit in it and purchased an mtx req-5 to take the speaker level inputs and convert them to rca, this unit also restores the bass at higher volume levels. This setup is ok but i will be putting my aftermarket head unit in soon, as the sound quality is better with it....i tried the oem headunit setup with the req-5 because i wanted the cleaner look, but the sq simply isnt as good

I have only installed a few aftermarket systems in my previous trucks. All of them had aftermarket HUs. Would I be better of having the professionals like Crutchfield do the install for me. (Crutchfields in my hometown) I really don't want to change out my stock HU.
