Amp Level
so my amp level ranges from 6v to 0.2v
my head unit output is 2.5v, im guessing i should match it roughly but it sounds better at the 0.2v but idk if its safe and dont want to damage anything,

The level your talking about is the amplifier's input gain. It is there to adjust your amp to the signal it receives from the head unit. Max gain is at the setting of .2 volts, which is why it sounds louder to you.
Set the gain at it's lowest level (6V), put some music you normally listen to on (CD preferably), set the volume of the head unit at around 2/3-3/4 of max (you should never go above that because the head unit will start distorting the output), slowly turn the gain on the amp up until you hear audible distortion, then turn back slightly.
